Sun-Dried or Plooie Raisins
In this method, grape bunches are tied to ropes and hung in a clean environment, away from pollutants, under direct sunlight. This process helps evaporate the water from the grapes and speeds up the drying process, which usually takes between 15 to 20 days. Sun-dried raisins have a darker color, which is caused by the direct exposure to sunlight, resulting in shades of dark red-brown or black.
The benefits of sun-dried raisins are similar to those of shade-dried raisins, but they are commonly used in the preparation of pilafs, pastries, cakes, and salads. It is important to note that organic raisins should be stored in a cool place in sealed containers. To prevent them from drying out, their stems are left attached, and they should not be washed after harvesting to ensure better preservation and prevent mold growth.

To prepare this type of raisin, like the sulfur-treated raisins, the grapes are placed in a sulfur and special solution, then exposed to sunlight. They are either hung or placed on mesh surfaces to dry. The color of this raisin is red or black, and the darkness is due to the direct sunlight exposure.
